MACCHIATONDA NATURE RESERVE
This most interesting Latium natural area falls within Santa Marinella’s municipality and is managed jointly by the town and the WWF. The reserve allows visitors to enjoy the lure of wild beaches and the pleasure of a natural setting among herons, egrets, ducks, flamingos and wild geese - a favourite area for swamp hawks and other birds of prey.

THE MONTI DELLA TOLFA
The Monti della Tolfa (Tolfa mountains) ought, technically, to have been a large regional park. However, although the area has been ready for many years, the regional park has never been opened, for reasons which are still unclear today. There is a particularly interesting and comprehensive itinerary which allows visitors to admire all the characteristics of this area, and which winds along ancient tracks, leading to the sea. Another fascinating path is the Bosco (wood) del Quartaccio ring, which meanders through pastures, woods and delicate characteristic seasonal blooms. To fully explore this territory, however, a pleasant horse ride is highly recommended - definitely the most suitable “means” to travel in this territory; there are many equestrian centres offering expert guides and suitable training courses in this area.

A TRADITIONAL RECIPE
ROMAN-STYLE ARTICHOKES
Category: side-dish Difficulty: easy Ready in: 1 hr and ½ Season: winter
Ingredients (four servings) 8 artichokes, 2 cloves of garlic, 1 small bunch of Italian mint, Italian parsley, 1 lemon, 1 cup of extra-virgin olive oil, salt and pepper Preparation Clean the artichokes by removing the tough outer leaves and the prickly choke with a small sharp knife. Place them in water with lemon (to prevent discoloration). Mince the softer part of the stems along with the mint, garlic, parsley and season it with oil, salt and pepper. Fill the inside of the artichokes with the mixture and salt them lightly on the outside. Put the artichokes, head down, in a pan, drizzle the oil and add 6 tablespoons of water, cover them and let them cook on a medium heat for 40 minutes. THE UNCONTAMINTATED BEAUTY OF THE MACCHIATONDA RESERVE
The indefatigable work of associations and nature lovers to defend the remaining expanses of the Latium humid forest has led to the creation of several nature reserves. The forest once covered the whole coastline north of Rome, but was severely attacked in the middle of the 20th century. In 1983, thanks to the creation of the Riserva Naturale Statale del Litorale Romano (the State Nature Reserve of the Roman Littoral), the coastline between Passo Oscuro and Castel Porziano was protected, including the areas under Fiumicino and Rome municipalities. Further north, although the hoped-for creation of the Regional Park of the Tolfa Mountains never occurred, other smaller protected areas were born. Among these, the Riserva naturale di Macchiatonda, which falls under Santa Marinella’s municipality and is managed jointly by the town and the WWF. This nature reserve, among the most interesting in Latium, allows visitors to enjoy the lure of wild beaches and the pleasure of ancient scenery. Originally, in fact, the Latium coasts were characterized by lacustrine basins with brackish water, home to a rich flora and fauna. These ecosystems, which have nearly disappeared, still survive in Macchiatonda: here the accumulation of marine sediments has created sandbars which in turn have allowed swamps to form. These are now home to herons, egrets, many types of ducks, flamingos, cranes, wild geese, the swamp hawk and other birds of prey. During the migratory season it is common to see the wonderful sight of migratory waterfowl. The swamps are surrounded by woods and reed thickets, whereas along the coast the vegetation is characterized by the Mediterranean scrub and hydric-alophile vegetation (characterized by plants which are adapted to saline territories). Easy to follow footpaths, marked by arrows and didactic charts, allow visitors to see the protected area in comfort. In addition, they can observe and recognize the different species of animals, thanks to the explanatory panels, from the watchtowers close to the artificial lakes.
