Romanesco broccoli soup


Fresh Roman broccoli
Old bread, sliced
Cloves of garlic
Salt, pepper
Extra virgin olive oil

Toast the slices of bread and rub them with garlic. Place them in soup bowls. Wash the broccoli and  break them into tops; cook them in a pan with water on a lively flame, and do not cover them.
Wet the slices of bread with cooking water. Drain the broccoli and place them on the bread. Season with plenty of oil, salt and pepper. Serve hot.
