Potato dumplings with vegetables

300 g potato gnocchi
1 aubergine
4-5 cherry tomatoes
2 courgettes
2 coloured peppers
extra virgin olive oil
salt, pepper and peperoncino (small italian chilli)

Brown the minced onion, pepper and peperoncino in pan. Add the cubed aubergines, courgettes, peppers and tomatoes. Cook the gnocchi and mix them in with the sauce.
